Aunt Theresa’s Pumpkin Bread Recipe
For those of you who’ve already read Convergent, you might have noticed a scene where our heroes enjoy a special treat–Mrs. O’Gara makes a few loaves of Aunt Theresa’s famous pumpkin bread. Well, this happens to be inspired by a real recipe that’s been in my family for generations… and if you want to give it a try, it’s absolutely perfect for the holidays! This is what Thanksgiving and Christmas smell and taste like in my house… and in Marsha’s. 🙂
Aunt Theresa’s Pumpkin Bread
DRY INGREDIENTS
3C Sugar
3 1/2 C Flour (can be a mix of whole wheat and regular flour)
2 t Cinnamon
1 t Nutmeg
1 t ginger
1/2 t cloves
2 t salt
2 t baking soda
1 t baking powder
WET INGREDIENTS
4 eggs
2/3C oil
1 C water (or chai tea)
1lb pumpkin (one 15oz can if using canned, approx 1.5-2 cups if using fresh)
Preheat oven to 325 degrees F or 160 degrees C. Grease and flour 3 bread loaf pans. Whip wet ingredients together, then add dry. Mix well with an electric mixer. Pour into greased and floured loaf pans and bake for 1 hour or until a toothpick inserted into the center of one loaf comes out clean. Enjoy!
